Pasta, Veg, Tomato and Tuna

You need:
Tagliatelle or Fettucine Egg Pasta (dried or fresh)
Courgette, sliced thinly
Red Pepper, sliced
Small tin of Tuna in springwater
Passatta
Tomato Purree or Red Pesto to thicken
2 Saucepans

One Saucepan fill with water and put on to boil. This is for the Pasta. Once boiling put in the pasta and simmer for 5-10 minutes depending on packet instructions. In the other saucepan pour in some Passatta, add the tuna, veg and thickener (if required). Simmer on a low heat when you put the Pasta in for boiling. Keep stirring it so that it doesn’t burn on the bottom. Once the pasta is ready, drain it and serve with the veg and tuna on top. Add a little Parmesan or Cheddar cheese if you like.

GI Points: 4-5 depending on quantities and ingredients.

Ease of Recipe: This is a very simple recipe that can be used in emergencies. The Passatta, Pasta, Tuna and Pesto can sit in a cupboard for months, so all of you need to do is grab some veg whenever you feel like it.

At this point I should mention I don’t like mushrooms and I don’t add onion as it hurts my eyes too much to cut it! But these can usually go into most dishes as well :)
