Chicken and Veg Pasta Bake
Need:
2 chicken breasts cut into strips
1 Red Pepper sliced
Spring Onions chopped
Mushrooms halved/quartered
Pasta boiled for a couple of minutes only
Passata
Chopped Tomatoes
Spices, Herbs and Seasoning
Low Fat Cheese – grated
Stirfry the chicken and veg until lightly cooked, add the Passatta, Chopped Tomatoes and Seasoning, simmer for 5-10 minutes (or longer if you prefer) – stir occassionally.
Boil the Pasta – ideally Penne Pasta.
Once ready, stir the pasta in with the chicken and veg, then put into a pyrex bowl, cover with grated cheese and put into a preheated oven for 15-20 minutes at 180 degrees Celcius. You could always create a quick cheese sauce to put on first if you wish.
Addition: Add low-fat Sour Cream to the tomato sauce to give a slightly lighter, creamier taste.
