Chicken Fajitas

Chicken Fajitas are my favourite food these days. Without a decent outlet for Pizza in this country, besides Zizzi’s, then if I can I’ll have fajitas. I add as much salad and veg as possible to it too to lessen the amount of higher cal foods I eat ie. cheese, sour cream and chicken. It’s a great meal which is liked by many and fairly healthy if done right. This is workable for most diets.

GI Plan:
Omit Sour cream and use either low fat versions or Greek Yoghurt.
Use low fat cheddar cheese, or omit altogether.
Omit the tortillas if you don’t have the points left.

Atkins:
Omit the Tortillas.
Don’t go overboard on the tomatoes and salsa (or substitue salsa for guacamole).

Slimming World:
Red Day – As per the GI Plan
Green Day – Omit the chicken and bulk out with more veg or quorn, greek yoghurt and low fat cheese.

For the full recipe you will need (per person)
1 small chicken breast, sliced thin-medium
2 tortillas
1/2 Red Pepper sliced thin-medium
3 Spring onions sliced in half each way
Lettuce sliced
Tomatoes cut into quarters (or more depending on size)
Cheese grated
Sour cream
Salsa and/or Guacamole
Fajita seasoning

Heat a wok or pan up to a hot heat, add a little oil. Add the chicken and fry for about one minute, turning once. Sprinkle the seasoning over to suit. Add the peppers and spring onion and stirfry for a further 2-3 minutes until chicken is cooked.

Warm the tortillas in a microwave or oven as per the packet instructions.

To serve:
A bit of each on a tortilla! My favourite is a torilla with a line of chicken and veg mix, cheese on top (so it can melt from the heat), salsa, sour cream or yoghurt, lettuce and tomato. Wrap it up and try and eat it before it all falls out the back!!!

For the GI Plan it depends on how many points you have left for the rest of the day, or put aside for your meal. Remember one tortilla equals 3 points. This meal works out from 2-3 points upwards depending on how much you eat and what else you have. The more veg you have the less chicken you need which cuts the points down.

  2. [...] So what do I need to stop buying and eating… Cheese. I’ll get the low fat (about 3%) version from Sainsburys as it tastes fine in cheese sauce. I don’t think it’s too bad on Fajitas either, however I shouldn’t be eating sour cream and low fat yoghurt on Fajitas just doesn’t cut it for me! So I guess that’s my favourite dish out the window for a while. We need to get back to the Chinese supermarket to pick up some sauces for noodles and rice as that’s probably the best thing to substitute fajitas with. The black pepper sauce I bought there, a Blue Dragon make that doesn’t seem to sell in the usual supermarkets, was just spot on, so I’ll be buying about 10-20 packs of that! It’s only 50p or so and does two of us which is fine. [...]
