Fish & Pasta Pie
Slight variation on the usual mashed potato topping. I’ve mentioned both but for the GI Plan you’d be better off using Pasta as it’s lower in points and GI.
Need:
1 Salmon Steak
1 Haddock Fillet (smoked)
small bowl of prawns
handful of peas
Grated low fat cheddar
1 tsp Butter
1 heaped tsp flour
Milk to suit (about 250ml)
Cut up the salmon and haddock into chunks and put into a deep pyrex bowl. Add in the prawns and peas. Cook the pasta until slightly underdone. Make a cheese sauce by melting the butter in a pan on low heat, stir in the flour until completely mixed with the butter. Add the milk and heat, stirring constantly, then add the cheese and continue to stir constantly until slightly thick.
Drain the Pasta and arrange on top of the fish, pour over the cheese sauce, try and cover all the pasta to keep it soft in the oven. Put in an oven for 30 minutes at 180 degrees Celcius.
The alternative to a pasta topping is to boil and mash potatoes. Pour the cheese sauce over the fish and then put the mashed potato on top. Sprinkle some grated cheese on top of the whole pie. Cook at the same time/temperature.
