Beef Tacos

This is a nice meal that makes a change from bolognaise, which is really the only thing I use mince for most of the time. Obviously we have mince pie, shepards pie etc. but I like food with a good flavour to it!

For the GI diet just substitute sour cream for low fat greek yoghurt, low fat cheddar for full fat cheddar, add more salad and just have 1 or 2 tortillas.

Need:
1lb mince (500g)
500ml jar of mild/medium/strong Chilli sauce (I use Asda’s own, 0.4% fat and around 90 calories per 100ml)
1 medium onion sliced
Tin of Sweetcorn drained
half a red pepper, sliced
Taco shells or softflour tortillas

Brown the mince in a pan, add any veg you wish, then add the chilli sauce. Simmer for 25-30 minutes. (yep that’s all folks!)

Serve with
Grated cheese
Sour Cream or Greek Yoghurt
Warmed taco shells or tortillas (Marks & Spencers do a wholemeal tortilla)
Salsa or Guacamole
Tomatoes and Lettuce

GI Points per Tortilla (of course assuming you don’t go overboard! fill up on salad)
