Pan Fried Lemon Sole

I love Lemon Sole. It’s such as light fish with a great flavour. I’m always intrigued as to how lemon sole tastes so lemony! Anyhow, when I first went to Dublin we had dinner in this nice little Italien restaurant in one of the towns on the coast. I had this Lemon Sole dish which was incredible. Whilst I’ve not managed to recreate it exactly, my own version is still pretty nice!

Lemon sole fillets
Flour
Salt and Pepper
Butter
Half a Lemon

Put some flour into a box or on a plate, season with the salt and pepper.
Wash the fillets clean, then toss in the seasoned flour to cover both sides.
Melt the butter lightly in a pan (do not allow to burn)
Keep the pan on a low to medium heat (2-3 out of 5)
Add each fillet, one at a time, and fry for 1-2 minutes on either side depending on the thickness of the fillets

Squeeze a little extra lemon juice over the fish. Serve with new potatoes and vegetables.
