Summer’s Good for Dieting
I’ve realised in the past and definitely this summer that the summer time is the easiest time for dieting and healthy eating. With the heat we’ve been suffering here in the UK your appetite starts to go, if you do eat you just want light simple meals, nothing stodgy, and most alcoholic drinks will just make you feel worse! It’s water and fruit juices all the way!!
So what are we eating these summer nights? Light food goes down well, especially fish. We’ve been trying to eat fish at least twice a week but ideally I’d rather eat it 3-4 times a week, however the price of fish is so costly it can work out an expensive taste. Summer dishes however have been
Pan fried seasoned Plaice fillets using the Pan Fried Lemon Sole recipe. This with either fresh salad and coleslaw or cauliflower cheese goes well too!
My favourite of Chicken Fajitas – especially good when you have visitors!
Fish Pie – just don’t go overboard on the potatoes as they’re heavy this time of year.
Pasta and Red/Green Pesto – light, easy and great for a light lunch.
Aberdeen Angus Steak Burgers – you can’t beat the taste of a real decent burger. Usually I’d make my own (I’ll throw up a recipe one day!) but these were shop bought. 3 quarterpounders between 2 of us, we used small sandwich rolls, cheddar cheese and fresh lettuce and rocket picked from the garden. I’m not a big fan of chips (well not in this country) and was quite happy with having coleslaw and tomatoes on the side.
Steamed Salmon, fresh Potato Salad and fresh salad – substitute this with Tuna steaks too.
And of course we’ve been having plenty of BBQs – corn on the cob, nurnberg Bratwursts (the mini ones you can get in Lidls) or chipolatas, spicy chicken wings and drumsticks, chicken kebabs, halloumi, steak, spicy beef sticks and burgers. Of course not that much every week! But we vary it. Along with homemade garlic bread and salad consisting of lettuce, cucumber, pepper, spring onion, Tomato, Mozzarella and Basil and of course coleslaw and Potato Salad.

What about some humus and pitta?
Hmm not a big fan of humus, however pitta breads are great as they’re not as heavy as normal bread. I used to do a toasted pitta with a bit of ham and cheese then stuffed with lettuce, salad dressing and a bit of coleslaw.
Used to live off those for lunch!
Pitta and taramasalata is nice. But it’s not filling enough for dinner.
