Quick ‘n Easy Pasta
I enjoy eating pasta but I’m often stuck for ideas on what to have with it. Pasta on its own is a bit bland and tasteless, but most sauces are calorie laden or consist of tomatoes. I do like tomatoes, bolognaise etc. but sometimes it’s nice to have pasta to accompany a meal of fish or chicken without the tomatoes needed.
The other day I came across a simple solution. We had some chicken and other meats left over from a BBQ and so I put the cold, cooked meat into a pan and covered it with a chicken stock and left it to simmer for about an hour. This allowed the meat to soften and also moisten.
When ready for dinner, I simply boiled some Pasta, took the meat out of the stock and thickened it a little with some flour. Then I simply coated the pasta with the thick stock sauce and served it with the meat. A bit of fresh veg such as asparagus (perfect this time of year) or peas and sweetcorn and you’re set. It also works well with salad too.
This is so simple but healthy and easy. I always have stock cubes in the cupboard and pasta on the shelf and it’ll go well with almost any meal!
